1 1/2 lbs. boneless round steak, excess fat removed
1/2 tsp. salt
1/4 tsp. fresh ground pepper
2 c. shredded cabbage
1/3 c. chopped onion
1/4 c. long-grain white rice, uncooked
1/2 c. of your favorite barbecue sauce
1/2 c. water
8 sesame seed buns or sandwich rolls
Prepare inside of slow-cooker with cooking spray. Rub
each side of beef with salt and pepper.
In another bowl, mix together cabbage, onion, rice,
barbecue sauce and water.
Layer beef and cabbage mixture into crock pot and
cover. Cook on low for about 8 hours. Beef will be so
tender it will fall apart when stirred with a fork.
Stir cooked beef and cabbage mixture together and
serve on warm buns.
Makes 8 sandwiches.

1/4 lb sliced, seasoned pork belly
6-8 red potatoes, quartered

2.) strip large stems from collard leaves, tear leaves into
small pieces and stuff into pot
3.) put everything else in pot, cover and cook on low for 10

1 can (4 oz.) diced green chiles, undrained
1 jalapeño pepper, diced
7 tomatillos, diced
2 lb. lean pork, cubed and browned
2 tsp. dried oregano
2 tsp. dried sage
1 tsp. ground cumin
1 tsp. red pepper flakes, optional
1/2 cup beer

Salsa
Cilantro, chopped
Sour cream
Cheddar cheese, shredded
Sliced black olives
Pickled carrots
Pickled jalapeños
Flour tortillas, on the side
Sauté onion and green pepper, with garlic, in olive oil.
Pour into a crock pot. Add diced green chiles. Add remaining ingredients and mix well.
Cover and cook on LOW heat setting for 6 yo 8 hours.
Traditionally, this is served in bowls, with hot flour tortillas, salsa, and cilantro. You can also
garnish with sour cream, grated cheese, olives, and pickled carrots and jalapeños.

Crock Pot BBQ Sandwiches
1/2 cup water
1 (3 lb.) beef brisket
3 TB cider vinegar
2 TB Worcestershire sauce
1 tsp. ground cumin OR 1 tsp. chili powder
3 cups bottled barbecue sauce
12 to 16 Kaiser rolls or hamburger buns, split
Dill pickle slices
Red onion slices
Trim fat from brisket. Cut the brisket, if necessary, to fit in a 3-1/2 to 4 quart crock pot.
Add water, vinegar, Worcestershire sauce, and cumin or chili powder. Cover and cook on
LOW heat setting for 10 to 12 hours or on HIGH heat setting for 4 to 5 hours.
About 1 hour before serving, remove the meat from the cooker. Discard cooking liquid. Using
two forks to pull, shred meat and return it to the cooker. Stir in barbecue sauce.
Cover and cook on HIGH heat setting for 30 to 45 minutes or until heated through.
Serve on split Kaiser rolls or hamburger buns with pickles and onions, if desired.
Makes 12 to 16 sandwiches.

1 large celery rib, trimmed and chopped
2 cups (1 8 oz. pkg.) mushrooms, sliced
2 medium garlic cloves, minced
4 cups cauliflower, florets
1 can (15 oz.) garbanzo beans, rinsed and drained
1 can (15 oz.) pinto beans, rinsed and drained
1/2 tsp. dried oregano, crushed
1 tsp. ground cumin
1 tsp. chili powder
1/4 tsp. ground black pepper
1/2 tsp. table salt
2-1/2 cups fat free chicken broth, or vegetable broth
Coat a large nonstick pot with cooking spray. Add leek, Hungarian pepper, red pepper flakes or
jalapeño pepper, celery, mushrooms and garlic. Sauté over medium high heat until golden, stirring
frequently, about 5 minutes.
Spoon mushroom mixture into a 5 quart crock Pot.
Add cauliflower, beans, oregano, cumin, chili powder, pepper, salt and broth.
Cover and cook on LOW heat setting for 7 to 8 hours.
Just before serving, remove 1 cup of solids and about 1/4 cup of liquid. Place in blender and puree.

Slow Cooker Shredded Beef on Potato Mounds
Serves 4; 1 cup meat mixture and 1/2 cup potatoes per serving
When you know you won't have much time in the evening to prepare a hot meal,
here's a go-to recipe the whole family will relish. The beef mixture (no
potatoes) also makes a great filling for soft tortillas.
Vegetable oil spray
1 pound boneless round steak, all visible fat discarded
2 medium green bell peppers, thinly sliced
1 large onion, thinly sliced
8-ounce can no-salt-added tomato sauce
1 tablespoon low-sodium Worcestershire sauce
2 teaspoons sugar
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups packaged refrigerated mashed potatoes
1/4 cup finely snipped fresh parsley
Lightly spray a slow cooker with vegetable oil spray. Put the steak in the
pot. Top with the bell peppers and onion.
In a small bowl, stir together the tomato sauce, Worcestershire sauce, and
sugar. Pour over the vegetables. Cook, covered, on low for 3 1/2 hours, or
until the steak is tender.
Transfer the steak to a cutting board. Shred the steak with a fork.
Return to the slow cooker. Stir in the salt and pepper. Put the cover back
on, but don't turn on the slow cooker.
Prepare the potatoes using the package directions.
To serve, spoon the potatoes in the center of shallow bowls. Top with the
steak and its liquid. Sprinkle with the parsley.

2 lb round steak, lean
2 green peppers, sliced thin
1/2 onion, minced
1 cup beef broth
2 tablespoons soy sauce
1/2 teaspoon ground ginger
1 garlic clove, minced
1 teaspoon Worcestershire sauce
Cut the steak into serving size pieces. If desired you can brown
the meat in a little hot oil before adding to crockpot. Place the
thinly sliced pepper rings in bottom of crockpot, reserving a few
to place on top of meat if desired. (Vegetables cook better when
placed on bottom of pot.) Arrange the meat on pepper, careful to
not stack one piece directly on top of another. Mix all other
ingredients and pour over meat and peppers.
Cover and cook on low for 8-10 hours or on high for about 4 hours.
Serve with mashed potatoes and simply seasoned vegetables.

DIRECTIONS:
Heat the oil in a skillet over medium heat. Place turkey in the skillet, and
cook until evenly brown; drain.

red pepper flakes, garlic powder, cumin, black pepper, allspice, and salt.
Cover, and cook 8 hours on Low or 4 hours on High.

1 pkg. (1 oz.) taco seasoning mix
2 cans (8 oz. ea.) tomato sauce

1 can (15 oz.) black beans OR kidney beans, rinsed and drained
1 can (15 oz.) white hominy, rinsed and drained
4 cups tomato juice OR V-8 juice
1 cup water
Garnishes:
6 cups corn chips
1 cup Cheddar cheese, shredded
1/2 cup green onions, thinly sliced
In a skillet over medium heat, sauté beef and onion until beef is browned,
drain.
Pour beef mixture into a crock pot/slow cooker.
Add remaining ingredients, except Garnishes; stir well.
Cover and cook on LOW heat setting for 2 hours.
To serve put a handful of corn chips in each bowl, and top with cheese and
green onions.
Serves: 6.

6 (9 to 10 inch) tomato flavored or plain flour tortillas, warmed
3/4 cup (3 oz.) sharp Cheddar cheese, shredded
1 recipe Pico de Gallo Salsa, recipe follows
Shredded jicama or radishes, optional
Dairy sour cream, optional
Trim fat from meat. Cut meat into 6 pieces. In a 3-1/2 or 4 quart crock pot, place meat,
undrained tomatoes, onion, chipotle peppers, oregano, cumin, and garlic.
Cover; cook on LOW heat setting for 8 to 10 hours or on HIGH heat setting for 4 to 5 hours.
Remove meat from cooker. Using 2 forks, pull meat apart into shreds. Place meat in a large
bowl. Stir in cooking liquid to reach desired consistency. Spoon one-sixth of the meat onto
each warm tortilla just below the center. Top with cheese, Pico de Gallo Salsa, and, if desired,
jicama and sour cream. Roll up tortilla.
Makes 6 servings.
Pico de Gallo Salsa: In a bowl combine 2 medium finely chopped tomatoes; 2 tablespoons finely
chopped onion; 2 tablespoons snipped fresh cilantro; 1 fresh serrano chile pepper, seeded and finely
chopped; and dash sugar. Cover; chill several hours.

1 tablespoon vegetable oil
2 pounds (32 ounces) ground turkey
1 can (12 ounces) beer
1 jar (26 ounces) spaghetti sauce
Water
1 can (6 ounces) tomato paste
1 package (11/2 ounces) dry spaghetti sauce seasoning mix
Hot cooked spaghetti noodles
1. Heat oil in large skillet over medium-low heat. Add turkey; cook and stir
until no longer pink. Add beer; cook and stir 2 to 3 minutes or until
mixture is well combined.
2. Place turkey mixture in 5-quart slow cooker. Add spaghetti sauce. Fill
empty sauce jar with water. Pour water into slow cooker. Add tomato paste
and seasoning mix; stir to combine. Cover; cook on LOW 6 to 8 hours. Serve
over spaghetti noodles.

Honey-sweetened tzimmes is a classic dish for Rosh Hashanah (the Jewish New Year).
Toss all the ingredients into a slow cooker in the morning before heading out to temple
and you'll return home to a fabulous, no-fuss holiday meal.
2 cups onions, chopped
3 lb. raw lean beef brisket, boneless, trimmed, cut into 1" pieces
2 large garlic cloves, minced
2 medium sweet potatoes, peeled and cut into bite-size chunks
1/2 lb. baby carrots, cut in half if large
8 small new potatoes, unpeeled, cut in half
1 cup pitted prunes
4 TB fresh lemon juice, divided
5 tsp. honey, divided
1-1/2 tsp. table salt
1/2 tsp. ground black pepper
1/4 tsp. ground cinnamon
1 cup canned beef broth
Place onion, beef, garlic, sweet potatoes, carrots, new potatoes, prunes, 2 tablespoons lemon juice
and 1 tablespoon of honey in a 5 to 6 quart crock pot/slow cooker. Add salt, pepper, cinnamon and
broth; stir well.
Cook on LOW heat setting for 7 to 8 hours.
About 5 minutes before serving, stir in remaining 2 tablespoons of lemon juice and remaining 2 teaspoons
of honey; cover and cook on LOW heat setting for 5 minutes.
Yields about 1-1/2 cups of solids and gravy per serving.

Makes 4 servings
4 salmon fillets ( 6 ounces each)
Salt and black pepper I cup Italian dressing
3 tablespoons olive oil
I red bell pepper, sliced
I yellow bell pepper, sliced
1 orange bell pepper, sliced
1 large onion, sliced
1/2 teaspoon dried basil
2 cloves garlic, minced
1 teaspoon lemon zest
2 cups fresh spinach leaves, washed and stems removed 3/4 cup amber beer
1/2 lemon, cut into 4 wedges
Additional salt and black pepper (optional)
1. Rinse salmon fillets and pat dry with paper towels. Salt and pepper both
sides of fillets. Place in casserole dish and pour Italian dressing over
fillets. Cover with plastic wrap and refrigerate 30 minutes, or up to 2
hours. Discard marinade.
2. Pour olive oil into 5-quart slow cooker and lay salmon fillets on top,
stacking as necessary Cover with peppers, onion, basil, garlic and lemon
zest. Cover with spinach leaves. Pour beer over top. Cover and cook on HIGH
11/2 hours.
3. Remove fillets to platter and top with vegetables. Squeeze lemon over top
of salmon and season to taste with additional salt and pepper, if desired .

INGREDIENTS:
1 tablespoon olive oil
3 pounds boneless venison roast
1 large apple, cored and quartered
2 small onions, sliced
4 cloves crushed garlic
1 cup boiling water
1 cube beef bouillon
----------------------------------------------------------
DIRECTIONS:
Spread the olive oil on the inside of a slow cooker. Place the venison roast
inside, and cover with apple, onions, and garlic. Turn to Low, and cook
until the roast is tender, about 6 to 8 hours.
When the roast has cooked, remove it from the slow cooker, and place onto a
serving platter. Discard the apple. Stir the water and bouillon into the
slow cooker until the bouillon has dissolved. Serve this as a sauce with the
roast.

1 (14.5 oz) can canned tomatoes, undrained
1 (15 oz) can chili beans
1 (4 oz) can chopped green chilies
cornbread
shredded Cheddar cheese
Drain tomatoes, reserving liquid.
Place carrots and onions in slow cooker. Arrange beef cubes on top of vegetables.
Sprinkle chili seasoning over meat. Add tomato liquid. Cover tightly and cook on high for 3-1/2 hours.
Add tomatoes, chili beans, green chilies and cook, covered 30 minutes.
Serve stew over cornbread squares and top with grated Cheddar cheese.

3 strips bacon
1-1/2 tbsp. flour
2 large cans sauerkraut
2 each medium potatoes, cubed; medium apples, cubed
3 tbsp. brown sugar
3 lb. Polish sausage, cut in pieces
3/4 cup water
Directions
Fry bacon until crisp, drain. Add flour to bacon drippings and
blend well. Stir in sauerkraut, mix well. Place sauerkraut mixture
and bacon pieces in a crockpot. Add all other ingredients. Stir
together thoroughly, cover and cook on Low for 7 - 9 hours or on High
for 3 - 4 hours.

1/4 tsp. each seasoned salt, garlic pepper
1 can (14.5 oz.) diced tomatoes, undrained, divided
1/3 cup dry red wine
1 can (6 oz.) tomato paste
Directions
Slice tops off peppers. Carefully remove seeds and inner ribs.
Remove stems from tops and chop remaining pepper pieces. Stand

chopped pepper tops, rice, corn, olives, green onions, seasoned salt,
garlic pepper and 1/4 cup tomatoes. Mix well. Stuff peppers with
corn mixture, dividing evenly and packing lightly. Mix remaining
tomatoes and liquid with wine and tomato paste until well blended.
Pour over and around peppers in slow cooker. Cover and cook on Low
for 6 - 7 hours, or until rice is cooked and peppers are tender, but
still hold their shape.

1 can cream of mushroom soup
1 can evaporated milk
1 can Rotel tomato and green chilis, diced
2 lb. cheese
Directions
Brown sausage and hamburger, drain grease. Put in crockpot and
add soup, milk and can of Rotel. Cut cheese into cubes add to
crockpot. Cook on High for 1 hour. Pour over taco chips.

1-1/2 lb. fresh-frozen fish fillet
1/4 lb. bacon, diced
1 medium onion, diced
1/2 - 3/4 cup chopped green onion tops
2 - 3 potatoes, peeled and cubed
1-1/2 cups water
to taste salt, pepper
1 can (13 oz.) evaporated milk
Directions
Cut fish into bite size pieces, lightly brown bacon and onions;
drain. Combine all ingredients in crockpot, cover and cook on Low 6 -
9 hours, or High 2-1/2 - 3-1/2 hours. Add milk last 1/2 hour.
Makes 8 servings.
Note: for variety or more add cubed carrots, chopped celery.

3 cups water
3 small chopped onions
3 ribs chopped celery
2 sliced carrots
1 can (1 lb.) tomatoes
1 tsp. pepper
1 pkg. (10 oz.) frozen vegetables
1 lb. sirloin steak, cubed
2-4 tbsp. beef bouillon
1/2 cup each butter or margarine, flour
Directions
Put all except butter and flour into crockpot. Cook on Low for
8 - 10 hours. 1-1/2 hours before serving, turn up to High. Make roue
of butter and flour stirring until smooth. Add to soup to thicken.

Meaty mushrooms and tender green beans stand in for beef in this creamy
Eastern European classic. Serve over wide noodles.
4- to 6-qt. slow cooker
Cook time: 6 to 8 hours
Setting 6 to 8 hours on low; 20 minutes on high
2 tbsp. olive oil
16 oz. small white mushrooms, quartered
2 tbsp. tomato paste
2 cups vegetable stock
1 large yellow onion, chopped
1 large green bell pepper, seeded and chopped
2 tbsp. all-purpose flour
1 1/2 tsp. sweet Hungarian paprika
8 oz. green beans, ends trimmed and cut into 1-inch pieces
Salt and freshly ground black pepper
1/2 cup sour cream or tofu sour cream
1. Heat 1 tablespoon of the oil in a large skillet over high heat. Add the
mushrooms and cook quickly to brown on all sides, 3 to 4 minutes. Set aside.
2. In a small bowl, combine the tomato paste with 1/4 cup of the stock,
blending until smooth. Set aside.
3. Without cleaning the skillet, heat the remaining 1 tablespoon of oil over
medium heat. Add the onion and bell pepper, cover, and cook until softened,
about 5 minutes. Stir in the flour and cook for 1 minute to remove the raw
taste.
4. Transfer the mixture to a 4- to 6-qt. slow cooker. Add the paprika, green
beans, the remaining 1 3/4 cups stock, and the tomato paste mixture; cover,
and cook on low for 6 to 8 hours.
5. At the end of cooking time, add the browned mushrooms and season with
salt and pepper. Remove the cover and cook on high until the flavors are
blended and the sauce thickens somewhat, about 20 minutes.
6. Just before serving, slowly whisk in the sour cream until well blended.
Serve at once.

Crockpot Pepper Steak
Serves 8
2 lbs lean beef steak or roast
2 green peppers, sliced
1 cup fresh button mushrooms, cut in half, if large or left whole if
small in size
2 onions, sliced
1 cup beef broth
2 tbsp low sodium soy sauce
1 tsp Worcestershire sauce
1/2 tsp ground ginger
1/2 tsp black pepper
2 tbsp oyster flavored sauce, optional
1 tbsp minced garlic
2 tomatoes, sliced into 6ths, optional
Cut the steak into bite sized pieces. Place vegetables in the bottom of the crockpot; place the beef on top of the vegetables. Add the rest of the ingredients over top. Cover and cook on LOW 8-10 hours or HIGH for 4 hours. Add tomatoes just before thickening. When cooked to desired tenderness, thicken with a flour paste or 1tbsp cornstarch mixed with 2 tbsp water, as needed.

5 baking potatoes, peeled and cut into 1" cubes
1 1/2 cups cubed cooked ham
1 15 oz can whole kernel corn, drained
1/4 cup green bell pepper -- chopped
2 teaspoons instant minced onion
1 can cheddar cheese soup
1/2 cup milk
3 tablespoons all-purpose flour
In a 3-1/2 to 4 quart crockpot slow cooker, combine potatoes, ham, corn,
pepper and onion; mix well.
In small bowl, combine soup, milk and flour; beat with wire whisk until
smooth.
Pour soup mixture over potato mixture; stir gently to mix.
Cover; cook on low setting for 7 to 9 hours or until potatoes are
tender.
Serves 6

2 lbs. rump roast
1 pk taco seasoning
1 can Mexican style diced tomatoes (15 oz.)
1 small can green chiles
1 can tomato sauce (8 oz)
1 onion - chopped
2 beef bouillon cubes
2 cans red kidney beans, (15 oz. each), rinsed, drained
Shredded cheddar cheese
Cut roast into bite sized chunks. Roll in taco seasoning and add to
crock pot. Then add the tomatoes, chiles, tomato sauce, onion, and
bouillon
cubes.
Cover and cook on LOW 6 hours or until meat is tender.
Add the drained beans and cook until the beans are heated through;
around 30 minutes. Serve topped with cheese, and/or the toppings that you
like.

Crock Pot Rio Grande Pork Chops
6 pork rib chops, cut 3/4" thick (about 2-1/2 lb.)
1 can (15 oz.) Mexican style or Tex-Mex style chili beans
1-1/4 cups bottled salsa
1 cup fresh* or frozen whole kernel corn
2 cups hot cooked rice
Chopped fresh cilantro, optional
Trim excess fat from chops. Place chops in the bottom of a 3-1/2 or 4 quart crock pot.
Add chili beans and salsa.
Cover; cook on HIGH heat setting for 2-1/2 hours or on LOW heat setting for 5 hours.
When that step is complete, turn to HIGH heat setting, if necessary. Stir in corn. Cover and
cook 30 minutes longer on HIGH heat setting. Serve over rice. Sprinkle with cilantro, if desired.
For all day cooking: Substitute 8 boneless pork chops for the 6 rib chops. (When cooked this long,
chops with bone may leave bony fragments in the cooked mixture.) Cover and cook on LOW heat
setting for 9-1/2 hours. Turn to HIGH heat setting Stir in corn. Cover and cook 30 minutes longer.
Serve as above.
Makes 6 servings.
*Note: 2 medium ears of fresh corn equal about 1 cup of whole kernel corn.

12 eggs
1 32 oz bag of frozen hashbrown potatoes -- partially thawed
1 lb of bacon cut into small pieces -- fried and drained
1/2 cup diced onions
3/4 lb diced or shredded cheddar cheese
1 cup milk
1/2 tsp dry mustard
salt and pepper to taste
As if you were making lasagne, layer your ingredients as such (bottom to top):
1. potatoes
2. bacon
3. onions
4. cheese
5. potatoes
6. bacon
7. onions
8. cheese
Now, beat the eggs, milk, mustard, salt and pepper together. Pour this over the
whole mixture. Cook on low for ten to twelve hours.

Crockpot Cornish Hens with Cherry Sauce
4 Cornish Hens
1 (6 oz) package Stove Top cornbread stuffing
1.5 cups hot water
1/4 cup plus 2 tablespoons margarine or butter
3/4 cup red currant jelly
1/4 cup pitted dried red cherries, coarsely chopped
2 teaspoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon ground allspice
Thaw hens if frozen. Place a rack in a slow cooker. In a medium bowl, combine stuffing mix with seasoning packet, water, and 1/4 cup of margarine/butter. Stuff hens and place on rack in slow cooker. In a small saucepan, combine jelly, cherries, remaining butter/margarine, lemon juice, salt and allspice. Cook over low heat, stirring until jelly is melted. Reserve 2/3 cup sauce. Brush remaining sauce on hens in cooker. Cover and cook on low 6-7 hours. Serve whole or cut hens in half with kitchen shears. Spoon reserved sauce over hens at serving time.

1 1/4 lb Boneless beef round steak; 1/2 to 3/4" thick; cut 6 pc
8 oz Pk fresh mushrooms; sliced
1 lg Onion; slice rings
1 cn Condensed French onion soup
6 1/4 oz Pk 15-minute herb stuffing mix
1/4 c Margarine or butter; melted
4 oz Mozzarella; shredded
Layer half of the beef, mushrooms and onion in 3-1/2 to 4 qt crockpot; repeat layers. Pour soup over ingredients. Cover; cook LOW for 8 to 10 hours or until beef is tender and no longer pink. Before serving, toss stuffing mix and contents of seasoning packet with melted margarine and 1/2 cup liquid from pot. Place stuffing on top of contents in crockpot; cover. Increase heat to high setting. Cook 10 minutes or until stuffing is fluffy. Sprinkle with cheese; cover. Cook until cheese is melted.

1 - 1-1/2 lb. boneless skinless chicken breasts; cut into 1" pieces
1 can (15-1/2 oz.) red kidney beans, rinsed, drained
1 can (15 oz.) tomato sauce
1 can (29 oz.) Italian stewed tomatoes, undrained
1 jar (4-1/2 oz.) sliced mushrooms, drained
1 cup bell pepper, chopped
1/2 cup each chopped onion, chopped celery
1 tbsp. garlic powder, or to taste
1 cup water
1 tsp. dried Italian seasoning
6 oz. uncooked thin spaghetti, broken in half
Directions
Combine all ingredients except spaghetti in crockpot. Cover
and cook on Low 4 - 5 hours. Pre-cook spaghetti for 6 minutes. Add
drained spaghetti to crockpot. Cover and cook on High 20 - 30 minutes
until pasta is tender.

Serving Size : 6
3 pounds Ham -- fully cooked
3 medium Sweet Potatoes -- unpeeled
3 medium Baking Potatoes -- quartered
6 Thin Carrots;peeled -- chunked
1 cup Ginger Ale
-----FOR THE GLAZE-----
1/2 cup Honey
1/4 teaspoon Ground Cinnamon
1/4 teaspoon Ground Cloves
1/2 teaspoon Dry Mustard
Scrub the sweet potatoes, trim. Scrub baking polatoes, quarter.
Peel carrots and slice diagonally in 2" lengths. Place vegetables on
the bottom
of the crockpot, place ham on top and pour ginger ale over all.
Cover and cook on LOW for about 9 hours, or until veggies are tender.
Mix about 2 tablespoons of liquid from the pot with the glaze ingredients
in a buttered measuring cup and pour over ham.
Comtinue cooking on LOW for 1 or 2 hours, basting often.
Slice ham in thin slices, serve with vegetables.

2-1/2 lb pork tenderloin
1 lime (juice and zest)
1 orange (juice and zest)
3 cloves of garlic, roughly chopped
2 T of cumin
(Note: I added some cayenne and cinnamon to round off
the second TBSP)
Salt and Pepper to taste
Lime quarters for each serving
Zest and then juice the citrus right in to the crock
pot. Add chopped garlic and cumin and mix well.
Sprinkle tenderloin with salt and pepper and cut it to
fit, if necessary. Cook on low for 8-9 hours. Cut and
remove strings from tenderloin, and shred the meat
with two forks, mixing in whatever liquid there is.
Serve with tortillas, beans, corn, guacamole, shredded
cheese, cilantro, etc. and/or over rice.
