Crockpot Ziti

Crockpot Ziti



1 12 oz box ziti
2 28 oz jars spaghetti sauce
1 egg
1 lb hot italian sausage (chopped or whole)
2 tbsp Toscano Bertolli Smeraldo olive oil
1 C. parmesan cheese
1/2 C italian bread crumbs
1 12oz pkg shredded mozzarella cheese
16-20 oz. ricotta cheese
2 eggs
1 C. parmesan cheese
2 tbsp parsley flakes
1 tsp Italian seasoning
1/4 tsp garlic powder
dash salt & pepper


Spray crock-pot with non-stick cooking spray.

Cook ziti according to package directions, drain. Brown and drain sausage.
Toss pasta with olive oil.
Add spaghetti sauce to mixture, toss well.
Stir together parmesan cheese, breadcrumbs, egg, 1/2 of the mozzarella cheese, and browned sausage.

Sprinkle lightly with garlic powder.
Beat together ricotta, 2 eggs, parmesan, parsley, italian seasoning, salt & pepper.

Pour half of spaghetti sauce, sausage mixture into crock-pot.
Spread entire ricotta mixture over first layer of pasta.
Cover ricotta layer with remaining pasta mixture, and cover with remaining cheese.

Cover, and cook on low 4-6 hours.

Spicy Red Beans

Spicy Red Beans

1 lb. red, white, & black beans (or any combo you like)
1 onion, chopped
2 bay leaves
2 whole jalapeno peppers
2 whole banana peppers
1/2 teaspoon cayenne pepper
2 Tbs parsley
1 Tbs basil
3 cloves garlic
1 Tbs black pepper
1/2 teaspoon curry powder
1 Tbs gumbo file
1 can beer (dark, preferably)
2 Tbs red wine vinegar
1/2 teaspoon Tabasco

Dump everything except the onion into a crock pot or
large pot, and let sit for 6-24 hours. Add the chopped
onion and put heat on high and go away. Check every hour
and add extra beer, water, vegetable stock, or just about
any other liquid (cheap red wine is good) *OTHER* than
vinegar to make sure the beans stay covered.

Cook until tender (anywhere from 4-8 hours, depending on
your crock pot and the phase of the moon). If you're
going to be out of the house, put the crock pot on low,
and make sure you've got an extra 2" of liquid in it
(cook 8-10 hours, bringing it to high whenever you get
back to the house).

If you don't like things *spicy*, either don't add the
jalapeno and banana peppers, or remove them after an hour
or two. If you like 'em hot, chop the peppers up about an
hour before serving and continue to cook.

This is great as-is; serve with cornbread and enjoy!

Slow Cooker Recipes - Cornish Game Hens

4 Cornish game hens (20 ounces each)
2 tablespoons vegetable oil
4 large red potatoes, cut into 1/8-inch slices
4 bacon strips, cut into1-inch pieces
Lemon-pepper seasoning and garlic powder to taste
Minced fresh parsley

In a large skillet, brown hens in oil. Place the potatoes in a 5-qt. slow cooker. Top with the hens and bacon. Sprinkle with lemon-pepper and garlic powder. Cover and cook on low for 6-8 hours or until meat juices run clear and potatoes are tender. Thicken the cooking juices if desired. Sprinkle the hens with parsley.

2 lbs ribs (country or baby back)
1 pkg. sauerkraut (rinse and drain well)
1 large onion - chopped
1/4 cup applesauce or apple cider
3/4 cup chicken broth or beer
2 Tbsp brown sugar
1 to 2 teaspoons caraway seed
pepper to taste
salt after cooking if needed

Cut ribs into serving size--and brown in a small amount of oil.

Remove from pan and add onion and brown sugar to pan; and cook till onion is light brown.

Combine with sauerkraut in the crock pot.

Add applesauce OR cider; and broth OR beer; caraway seed and pepper cover and cook on low for 8 to 10 hours.

Serves 4

ONE POT SLOW COOK MEAL IN ONE


6 skinless, boneless chicken breast halves
1 can condensed cream of chicken soup
1 can condensed cream of mushroom soup
1 can condensed cream of celery soup
1 can cream of Brocolli soup
1 can mushroom stems and pieces
1 onion chopped fine
1 cup shredded broccoli slaw mix from produce dept
1 large can evaporated milk
1 1/4 cup wild,brown or yellow rice NOT INSTANT OR QUICK

Cut chicken breasts into large chunks.
Place ALL in a slow cooker. MIX WELL
Cook on high for 3-4 hours or until rice amd chicken are tender.

Crock Pot Mexican Shredded Beef Sandwiches

1 (3 lb.) boneless beef chuck shoulder roast, cut in half
1 TB ground cumin
1 TB ground coriander
1 TB chili powder
1 tsp. salt
1/4 tsp. ground red pepper (cayenne)
1 cup salsa or picante sauce
2 TB water
1 TB cornstarch
Taco shells, flour or corn tortillas

Cut roast in half. Combine cumin, coriander, chili powder, salt and red pepper in small bowl.
Rub over roast.

Place 1/4 cup salsa in crock pot/slow cooker; top with one piece roast. Layer 1/4 cup salsa,
remaining beef and 1/2 cup salsa in crock pot/slow cooker.

Cover; cook on LOW heat setting for 8 to 10 hours.

Remove roast from cooking liquid; cool slightly. Trim and discard excess fat from beef. Shred
meat with two forks.

Let cooking liquid stand 5 minutes to allow fat to rise. Skim off fat. Blend water and cornstarch
until smooth. Whisk into liquid in slow cooker.

Cook, uncovered, 15 minutes on HIGH until thickened. Return beef to slow cooker. Cover; cook
15 minutes or until hot. Adjust seasonings. Serve in taco shells. Leftover beef may be refrigerated
up to 3 days or frozen up to 3 months.

Makes: 5 cups filling.
