Yield: 6 servings
2 pounds round steaks, cut in 1/2-inch cubes
1 cup onion, chopped
1 clove garlic, minced
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 teaspoons paprika
1/4 teaspoon dried thyme, crushed
1 (14 1/2 ounce) can tomatoes
1 cup sour cream
Put steak cubes, onion, garlic in crock pot. Stir in flour and mix to coat
steak cubes. Add all remaining ingredients except sour cream.
Stir well. Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5
hours, stirring occasionally. Add sour cream 30 minutes before serving,
and stir in thoroughly.

Crock pot Hungarian Goulash Low Carb

We make this same recipe--as a matter of fact we had the leftovers tonight! I've found it's fairly flexible as far as the tomatoes go; this time I made it with two fresh tomatoes and half a cup of water (although then I had to thicken it at the end, so I guess the water wasn't necessary); I've also cooked it with no tomatoes at all, just a bit of extra water, and then added some farm-style chili sauce (like salsa but sweeter) near the end.
We usually wreck the low-carb thing, though, by serving it with mashed potatoes or fries or perogies or...

Thank you for your comment. The low carb thing is always left upto the people who are doing the eating. They have to decide to keep the meal low carb or not.
