Slow Cooker Winter Squash and Apples

1 teaspoon salt
1/2 teaspoon black pepper
1 butternut squash (about 2 pounds), peeled and seeded
2 apples, cored and cut into slices
1 medium onion, quartered and sliced
1 1/2 tablespoons butter

1. Combine salt and pepper in small bowl; set aside.

2. Cut squash into 2-inch pieces; place in slow cooker. Add apples and
onion. Sprinkle with salt mixture; stir well. Cover; cook on LOW 6 to 7
hours or until vegetables are tender.

3. Just before serving, stir in butter and season to taste with
additional
salt and pepper.
Makes 4 to 6 servings

Makes 12 servings Variation: Add 1/4 to 1/2 cup
packed brown sugar and 1/2 teaspoon ground cinnamon with butter in
step 3;
mix well. Cook 15 minutes more.
